World’s Greatest shortbread cookies

Good old fashion shortbread cookies, with melt in your mouth goodness. You won’t believe how easy it is, to make them, and definitely, wouldn’t need to look any where else for a shortbread recipe.

Ingredients

1 small butter 250g

1/2 cup sugar .. look! so little sugar 🙂

2  1/3 cups flour

pinch salt

vanilla (optional)

Method

  1.  Whip butter and sugar until pale
  2. Add salt and vanilla
  3. Fold in flour with a spatula
  4. Let rest for 1o mins
  5. Dust counter with flour, roll and flatten dough*
  6. Cut into shapes, make a rectangle and slice or using an ice cream scoop, scoop dollops onto baking tray and emboss with a cutter or bottom of a textured glass
  7. Bake on hot air 140c for 35 mins.
  8. Let sit in the oven with the door slightly ajar for 15 mins

*Don’t worry about the dough being a little crumbly. Pat them to stick together.but don’t over work the dough.
