A guilt-free cookie indulgence. Made with the simplest ingredients, free of oil and flour and just 2 tablespoons of sugar! Lovely crunch on the outside and soft chewy centre. Shelf stable for 2 weeks and a definite staple for the cookie jar. You’ll love Amaretti !
Ingredients
1 large egg white (whole egg OK)
2 tbsp orange juice/almond liqueur/almond extract (extra orange rind OK too)
1 3/4 cup almond meal
2 tbsp icing sugar
Extra 1/2 cup icing sugar for dusting
Method
- Whisk egg in a large bowl until frothy. Add flavouring orange juice/almond liqueur/extract. Mix well
- Mix in almond meal and icing sugar using a bowl scraper to form cookie dough*.
- Place 1/2 cup icing sugar into a small bowl. Portion dough into small balls (a small ice cream scoop would help) and roll balls in the icing sugar
- Place dusted balls onto a lined baking tray, press down a little and bake in a preheated oven on hot air/convection fan force at 170c for 15 mins
Extra Notes
*Texture should feel like regular cookie dough, not too dry. Add extra juice if the dough is overly stiff. The recipe is very forgiving.
Note that newer ovens preheats within 4-6 mins. That’s why you won’t find ‘preheating’ oven as the first thing to do in this website. Conserve energy 🙂
