Any which way you do this, the pork will turn out tender and juicy in the combisteamer.
- Rub pork with salt*
- Insert a temperature probe into the thickest part of the meat, and plug the other end into the oven
- Select Gourmet Guide (chef hat), soft roasting, pork loin, seared, 2.5 hours (or up to 4.5 hours)**
- Remove the temperature probe and with the pork still in the oven, switch to Hot air steam 230c for 25 mins to complete the crackling process.
Just look at the pan drippings! Ready to be deglazed for an amazing sauce.
Equivalent settings: convection, low steam, core temperature 67c for 2.5 hours. Remove probe and tray from the oven and preheat on convection, maximum steam at 230c. Insert the tray and roast for 20 minutes 🙂
*to taste. Heavens, not too much. No salt is fine too, contrary to popular believe.
