Simmer lemon, lime and mandarin slices in 1 cup water & 1 cup sugar for 15 mins. Remove slices and reduce sugar syrup until thick, like maple or corn syrup. Line citrus slices into a (lined) baking pan. Pour cake batter in and bake #combisteam hot air humid 160c for 50 mins or BakeOmatic loaf cake, medium brown. Pour citrus syrup over cake. The balance of sweet and sour is divine ..no intervention needed š
