The world’s greatest Sticky Date Pudding

The world’s greatest, because it is the tastiest, the fluffiest and the easiest to bake!

Done this a million times and everyone loves it!

Ingredients
200g Pitted dates (1 1/2 cup)
1 teaspoon soda bicarbonate
300 ml boiling water

60g butter
3/4 cup caster sugar
2 eggs
1 1/3 cup self raising flour
1 Orange zest
1 teaspoon cinnamon

Butterscotch
3/4 cup brown sugar
65g butter
150 ml thicken cream
1 tsp vanilla

Method
1. Mix soda bicarbonate with pitted dates. Pour boiling water over and let sit for a few minutes, up to 20 mins. Retain water.

2. Now the cake part. In a bowl, mix butter and sugar well. The better you mix, the more fluffy the pudding. But, not compulsory

3. Add eggs, zest and cinnamon. Mix well

4. Fold in flour and add dates mixture (water all in). Mixture will be runny, don’t worry.

5. Use an ice cream scoop and half fill greased (even non stick) muffin pan with batter.

6. #combisteam Steam 100c for 25 mins.

Butterscotch
Bring ingredients to a boil. Then simmer till thick, about 5 mins.
(I WOULD DO A DOUBLE BATCH. NEVER ENOUGH!..)

SERVE warm topped with butterscotch and a scoop of ice cream.

ALTERNATIVELY, for a moist muffin, bake on hot air humid 170c for 20 mins.
