Fearless Fruit cake

FEARLESS because it is almost fail proof and you will procrastinate no more. I bet you won’t find an easier recipe..

Ingredients
1 can crushed pineapple (425g) Undrained
Dried fruits;
– Sultanas/cranberries 250g
– Dates 125g
– Cherries 125g
– Apricot 125g (cubed, small)
– 1/4 tsp bicarbonate soda
1 cup caster sugar
125g butter
3 eggs
Dry ingredients;
1 cup flour
1 cup self raising flour
Seasoning:
3 tsp cinnamon
2 tsp nutmeg
2 tsp ginger
pinch of salt

Almond & Whole cherries as toppings

Method
1. Bring undrained crushed pineapple and dried fruits to a boil. Switch off.
2. Stir in bicarb soda and let sit and soak for 10 minutes
3. Mix in sugar and butter
4. Add eggs
5. Fold in dry ingredients & seasoning, gently
6. Pour into mould and top with almond and cherries (halved)
7. Bake on BakeOmatic loaf cake/torte, medium brown. Or hot air humid 160c for about 1 hour (For a lighter shade, 150c for 1 hr 15 mins – monitor browning)

No alchohol in this recipe. Not very sweet either. If that’s how you like it. Make it your own by adding your favorite ingredients, switch the dried fruits, tone down the seasonings, add alchohol.. Who knows, you may have a eureka moment :O
