Crispy Potato skin bake

Recipe for dummies.. opps, I meant mummies. Busy mummies.. ;]

Ingredients
Large potatoes
Olive oil
________
Sour cream
butter
salt
pepper
chives
Parmesan

Method
1. Half the potatoes
2. Coat with olive oil
3. Lay on pan, skin side up
4. Bake on BakeOmatic, Baked potato, medium brown (Hot air humid 190c, 20 mins)

5. Scoop out potato insides,to make the filling
6. Place skins onto tray, hollow sides facing up
7. Mash potatoes with butter, sour cream, salt & pepper. Add chives
8. Using an ice cream scoop, fill potato skins generously
9. Top with parmesan
10. Grill on Hot Air steam 230c for 15 mins

Twists
– Steam and mash some sweet potatoes. Half fill skins with mashed sweet potatoes, and half with the regular potatoes
– Mash avocados/peas to add to filling (extra healthy and amazing colors! )
– Sprinkle with chopped bacon and parmesan before baking
