Cookie monster Cheesecake Souffle

On BakeOmatic; Souffle setting. No fuss over volume, temperature, time or water bath. Tastes like a cross between a standard cheesecake and Japanese cheesecake, light as a feather, and cookie dough provided a nice crunch in between the moist mousse texture.

The objective was to test out the BakeOmatic Souffle function on a light cheesecake recipe with a crunchy base. It worked! Even after missing out on the tablespoon of flour, the cake did turn out quite well.. The extra egg whites (fridge leftovers) gave it added lift, without Cream of tartar.. (I did not have any..). So I imagine if I had followed the recipe to a tee, the cake would have been gorgeous. Coming back to the point.. BakeOmatic Souffle really works for cheesecake 😉

RECIPE
Google for any cheesecake recipe (they are all pretty standard)
– For a lighter texture, whip egg whites stiff, like meringue (cream of tartar is a good idea)
– Fold egg whites into the batter gently
– Throw small cookie dough balls onto surface of the cake
– Bake on BakeOmatic, Souffle, Medium brown.
