Whip up your favorite Banana cake/bread recipe and throw in some dried cranberries. Raisins are fine but cranberries take it to a whole new level. Top off with chopped 70% Dark chocolate and sliced almonds before baking and voila, a gourmet banana cake. Dust some icing sugar before serving.
My banana bread recipe...
1. Into a blender, goes
- 4 ripe medium bananas
- 4 eggs (or 3 🙂 )
- 1 cup sugar
- 1 cup olive oil
- 3 heap tablespoons whipping or thicken cream/sour cream/yogurt (ensures moist results)
2. Place 2 cups self raising flour into a mixing bowl
3.. Add a pinch of baking soda (yes, you need this)
4.. Pour blender mix in and FOLD gently
5. Add dried cranberries (quick swirl)
6. Top off with chopped 70% dark chocolate and sliced almonds
Bake on BakeOmatic cake/Loaf cake/Hot air humid 160c for 50 mins
Dust with icing sugar before serving
ALTERNATIVELY, use chopped Apricots instead of Cranberries. lovely textures..
